Wine Pairing: Naked Mountain Vineyards 2003 Barrel Fermented Chardonnay
Shrimp, Green Pepper, & Sweet Potato Stew
Ingredients:
2 1/2 tsp cumin
3/4 tsp ground coriander
1/2 tsp ground ginger
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
3/4 lb shrimp (cut up)
1 1/2 lbs sweet potatoes (cut into 1” cubes)
3/4 cup broth
3/4 cup water
1 large onion (chopped)
3 crushed garlic cloves
1 green bell pepper (diced)
2 tbsp lemon juice
Directions:
1. Combine cumin, coriander, ginger, black pepper and cayenne pepper and set aside.
2. In a medium bowl combine shrimp with 1 tsp of the spice mixture and let stand.
3. On the stovetop combine the spice mix, sweet potatoes, broth, water, onion and garlic. Cover and bring to a boil, reduce to low and simmer 15-20 minutes, stirring occasionally.
4. Remove one cup of the sweet potatoes and mash them, then add back in.
5. Add shrimp and bell pepper, cover and cook for two - three minutes, stir once more.
6. Stir in lemon juice and serve hot.
