Grilled Game Hens

Wine Pairing: Jefferson Vineyards NV Monticello Chardonnay


Grilled Game Hens

Ingredients:
2 Cornish game hens
4 long wooden skewers
12 large sprigs fresh rosemary
1 teaspoon each powdered ginger, coriander and celery salt
½ teaspoon each: Sweet red curry,
Paprika, White pepper, Brown sugar
Dash of cinnamon
Zest of one lemon
Two clean bricks

Directions:

1. Place the rosemary in a water bath.
2. Fire grill to provide medium+ heat.
3. Mix dry ingredients in large bowl and add game hens, coating thoroughly.
4. Skewer hen.
5. Place bricks on grill to support the ends of the skewers and keep the birds off the grill. Once coals are ready, add hens.
6. Dry the rosemary, add three sprigs to the coals and cover for 4 minutes.
7. Turn the hens, add rosemary sprigs and cover for 4 minutes. Repeat until instant read thermometer inserted into thickest part of the thigh reads 170 degrees.
8. Remove to warm plate, cover loosely for 10 minutes and serve to accompany Jefferson Vineyards Monticello Chardonnay.
Serves 4.
