Gourmet Mini-Meatloaves
Ingredients:
1 onion, thinly sliced
1 tsp sugar
1 lb ground sirloin
1 tsp dried thyme
1 tsp dried rosemary
1/4 to 1/2 tsp dried fennel
1/4 tsp cayenne pepper
4 individual rolls, sliced
5.2 oz. Boursin cheese
Directions:
1. Separate onions into rings.
2. Place in heavy skillet sprayed with nonstick butter-flavored cooking spray; cook covered over low heat for 20 minutes, stirring frequently.
3. Remove cover and sprinkle sugar over onions; toss to coat.
4. Return cover to skillet and cook an additional 20 minutes, stirring occasionally.
5. Remove cover and cook an additional five minutes until the onions are caramelized and a golden brown color.
6. Preheat oven to 150 degrees; heat rolls in preheated oven for 10-20 minutes.
7. Mix caramelized onion, thyme, rosemary, fennel, cayenne pepper, and ground sirloin in a bowl.
8. Shape meat mixture into four 5-oz patties.
9. Grill until internal temperature of meat reaches 160 degrees.
10.Spread Boursin cheese over cooked meat patties and serve as an entree or as a sandwich.
